Landon’s Spaghetti



  • 1 large onion, coarsely diced
  • 2 Tablespoons (Tbl) olive oil
  • 5 Tbl minced garlic
  • 1 lb. Ground turkey (93% lean)
  • 1 teaspoon (tsp) Himalayan pink salt (or 1.5 Tbl No salt for low sodium diets)
  • 1 Tbl ground black pepper
  • 2 Tbl dried sweet basil
  • 2 tsp Italian Seasoning
  • 1 lb fresh sliced white mushrooms
  • 1/3 of a 750 ml bottle Oak Leaf Merlot
  • 1 14.5 oz can petite diced tomatoes
  • 1/2 67 oz Prego spaghetti sauce
  • 1 6 oz dry weight can sliced black olives, drained
  • 1/4 cup shredded 4-cheese blend
  • 1/2 cup grated Parmesan


  • 6 quarts water 1 Tbl olive oil
  • 1 tsp garlic salt 1 lb angel hair pasta
  • 2 Tsp olive oil 5 Tbl butter
  • 1 Tbl garlic powder 1 tsp garlic salt
  • 3 Tbl dried sweet basil 1/2 cup grated Parmesan


In a large fry pan over medium heat, add olive oil & onions. Saute’ until translucent, add garlic, and cook until slightly browned. Add ground turkey & continue cooking until no longer pink and broken up. Add mushrooms and mix in thoroughly. Add wine, cover, and simmer until mushrooms are thoroughly cooked & tender. Uncover, continue to simmer until completely reduced. Add tomatoes, simmer, & reduce again. Add spaghetti sauce and heat over low heat, add black olives.

In a dutch oven, bring water, olive oil, & garlic salt to boil. Add angel hair and cook according package directions. Drain pasta. Add olive oil, garlic powder, garlic salt, butter, and basil to dutch oven; mix thoroughly, add pasta, and completely coat pasta. Gently fold Parmesan into pasta until completely coated. Tip: start pasta near the end of the first sauce reduction.

Serve sauce over pasta (or Riced Cauliflower below) and add more 4 cheese blend, shredded mozzarella, and crushed red peppers to taste. Serves 6 to 10. The Riced Cauliflower is just a Green Giant frozen bag. I heated it in the microwave to the directions. I added: 3 Tbl Butter, 2 tsp garlic powder, 1.5 Tbl dried sweet basil, 1 tsp No-Salt 1/3 cup grated Parmesan I stirred until well blended.

Just before serving add cheeses & mix in completely.
